For the dough
3 cups all-purpose flour - 450g
1 tablespoon active dry yeast - 4g
1/2 teaspoon baking soda - 2.5g
1 cup unsalted butter, softened
1 cup granulated sugar - 180g
4 tablespoons strong brewed coffee
For the glaze
1/2 cup granulated sugar - 90g
1/3 cup strong brewed coffee
1/4 cup honey - 80g
For the dough

Mix together the flour, yeast, and baking soda
Cream the butter or margarine with the granulated sugar
Add the coffee and mix well
A little at a time, add the dry ingredients, mixing until smooth
Roll out the dough on a lightly floured surface to a thickness of 4.5 cm
Place in baking sheets without greasing
Bake in a moderate oven preheated to 180°C for about 7 minutes, or until the edges are golden
Place the granulated sugar, coffee, and honey in a small saucepan
Bring to a boil, then reduce heat and simmer for 5 minutes
Dip cooled cookies in glaze, then let cool
Yield approximately 100 cookies.
