2 tablespoons of your preferred filling (gelato, cream or fruit preserves)

Melt and temper the chocolate as directed
Using a spatula, fill the chocolate molds, removing excess with the spatula
Tap the molds gently on the work surface to eliminate air bubbles
Wait two minutes and flip them upside down over the refrigerator where the melted chocolate is located, forming a cavity for the filling
Place the molds in the refrigerator for 15 minutes
Put the filling into the cavities and cover the bottoms with chocolate
Level again with the spatula and return to the refrigerator for another 15 minutes
Unmold and wrap immediately.
