Sift the flour with the baking soda
Combine the cinnamon, nutmeg, and ginger
Beat the butter in a bowl until creamy
Add the confectioners' sugar and beat until fluffy
Add the honey and eggs; mix well
Add the sifted ingredients and mix thoroughly
Refrigerate for several hours or overnight
Roll out the dough on a floured surface
Cut into shapes with a cookie cutter, dusting with flour as needed
Place on a baking sheet lined with parchment paper
Bake in a moderate oven (170°F) for 10 to 12 minutes
Remove from the baking sheet and let cool.
