Beat in the egg and mix well
Then, add the honey and mix well
Cumulatively, mix the all-purpose flour with baking soda and spices, adding this mixture to the butter mixture and mixing well
Place the dough in the refrigerator until it becomes easy to handle
Roll out the dough slightly at a time on a floured surface, about 1/2 cm thick, and cut into various shapes
Garnish half of the cookies with chopped orange zest (if using) and place them on a baking sheet
Bake in a preheated oven at 400°F (200°C) for 5-7 minutes or until lightly browned
Remove from the baking sheet
Prepare the topping: Whisk together the egg white, orange extract, and confectioners' sugar in a bowl, adding the flour gradually, whisking continuously until smooth and shiny
Remove the cookies from the oven, let them cool slightly, and top the remaining cookies with the prepared topping.
