Preheat the oven to 150°C (gentle heat)
In a stand mixer, beat the egg whites until they become frothy
Add the salt and continue beating for another moment
Gradually add the butter, beating until stiff peaks form
Turn off the mixer, add the vanilla extract and coconut, and mix well
Using a spatula, remove portions of the mixture and place on an ungreased baking sheet
Place in the preheated oven until dry and crunchy (about 20 minutes)
Serve at room temperature
