Mix the sweet potatoes with the cheese, melted butter or margarine, salt, and black pepper
Shape into balls about 4 cm in diameter
Dip each ball in the beaten egg and then coat twice in all-purpose flour
Fry in olive oil or vegetable oil, turning until golden brown on all sides
Serves 3 to 4 people.
