2 large cooked and mashed sweet potatoes (about 1 cup)

Dissolve the yeast in 1/2 cup of warm water
Boil the milk and add the butter, sugar, and salt
Mix well until the sugar dissolves
Add the mashed sweet potatoes and mix well
Cool to room temperature
Add the yeast and half the flour
Mix well and beat the eggs
Add the remaining flour and mix everything
Knead the dough on a floured surface for 10 minutes or until uniform
Place in a greased bowl, turning once to bring the top layer up
Cover with a damp cloth
Let rise in a warm place for an hour or until the dough doubles in volume
Shape into 36 fritters or so
Place in a greased pan and let rise in a warm place for 30 minutes
Baste the fritters with melted butter
Bake in a moderate oven for 30 minutes or less.
