Lime peel strips from 1 lime
1/3 cup freshly squeezed lime juice
2 to 3 tablespoons grated ginger
1 tablespoon finely chopped fresh parsley
1 honeycomb of about 1.5 kg or more
1 tablespoon chopped fresh cilantro

Remove the melon seeds and then scoop out the pulp with a cookie scoop
In a small saucepan, combine lime peel, grated ginger, and 1/3 cup water
Bring to a boil, then reduce heat and let simmer for 5 minutes
Strain the syrup into a bowl and let cool
Add honeycomb balls and chopped cilantro
Cover and refrigerate for at least 2 hours or more
Serve in 4 portions.
