2 cups of breadcrumbs
2 cups of olive oil
1 cup of all-purpose flour
1/4 cup of chopped parsley
3 tablespoons of chopped coriander
2 tablespoons of chopped green onion
2 teaspoons of salt
6 pitted green olives, chopped

750 g of cooked cassava
1/2 kg of clean and fried fish (roballo or cavala)

Cut the fish into small pieces and set aside
Process the cassava and flour in a food processor until coarse
Add the parsley, coriander, fish, olives, green onion, and salt
Mix well

Remove about 1 tablespoon of batter from each batch and shape into balls with your hands
Beat the eggs lightly
Dip the balls in the eggs and then coat in breadcrumbs and fry in hot olive oil until golden brown
Drain on paper towels and serve.
