Mix the yucca with the egg white and whole egg
Add the butter and seasonings
Shape the mixture into 1/2 cup (scoop) sized balls and place one piece of mozzarella cheese in each ball
Coat the balls with bread crumbs and fry them in hot oil until golden brown
Remove with a slotted spoon and drain on paper towels.
