1 kg of yuca (manioc or sweet potato)

Peel the yuca and wash it well
Cook it in plenty of boiling water until soft
Drain and pass through a ricer or food processor
Combine with eggs, parsley, onion, and salt
Mix well
Gradually take spoonfuls of the mixture and fry in hot oil until golden brown
Drain on paper towels and serve warm
