Descale and cook the cod, then flake it
Place the flaked cod between two plates and squeeze out any excess moisture
Set aside
Cook the cassava until tender, drain and mash while still warm
In a bowl, combine the cod, cassava, salt, pepper, and onion
Mix until a dough forms
Beat the egg white until frothy and gently fold it into the cod mixture
Shape into fritters and coat in breadcrumbs
Fry in hot oil until golden brown
Serve immediately as an appetizer or accompaniment.
