12 medium-sized potatoes
2 tablespoons of grated cheese
1 tablespoon of chopped parsley
1 tablespoon of chopped onion

1 cup of milk
1 tablespoon of all-purpose flour approximately
Salt to taste

Fillling
1 handful of chopped spinach
1 tablespoon of butter
1/2 cup of chopped onion
1/2 cup of milk
1 tablespoon of all-purpose flour

12 medium-sized potatoes

Cook the potatoes until they're mashed
Drain and mash them to form a puree
Add the remaining ingredients and cook over low heat until excess liquid evaporates
Make the filling: melt butter, sauté onion and spinach
Mix in milk and all-purpose flour, season with salt
Cook until thickening starts
Divide the potato mixture into small portions and place a little of the filling in the center
Roll them into balls and arrange them on an ungreased baking sheet
Baste with egg yolk and bake in a medium oven until golden brown.
