1 cup of peanut butter cubes

2 large cooked sweet potatoes
2 tablespoons of wheat flour
1 tablespoon of oil
2 egg yolks, beaten
salt and pepper to taste

Melt the peanut butter cubes in butter
Sift the sweet potato through a ricer and combine with remaining ingredients
Shape into balls and place a peanut butter cube in the center of each one
Cook in boiling water until they float to the surface
Drain
Dredge in breading crumbs and fry
Serve 6 portions.
