Fry the bacon in its own fat, drain and reserve
Peel the potatoes and grate them coarsely
Wash the potatoes under cold running water, let them drain and dry with a cloth
Mix the potato with the onion, fried bacon, flour, and eggs
Season with salt and pepper
Place the dough of the fritter in hot oil, to the spoonfuls, and fry until golden brown
Drain on paper towels and serve immediately.
