For the cream
2 cups of milk (500 ml)
1/2 cup of sweetened condensed milk (150 g)
3 egg yolks
3 tablespoons of cornstarch
1 tablespoon of vanilla extract
1 can of whipped cream (300 g)

5 eggs, separated
2 cups of sugar (360 g)
2 cups of all-purpose flour (240 g)
1/2 teaspoon of baking powder
1 cup of warm milk (240 ml)
3 oranges, peeled and segmented (for garnish)

Prepare the cream: the night before, blend all ingredients except for whipped cream in a blender
Transfer to a medium saucepan and cook over medium heat, stirring constantly with a wooden spoon until the mixture thickens
Let it cool in a bowl covered with plastic wrap stuck to the surface to prevent skin formation
In a mixer, beat this mixture adding whipped cream gradually until smooth
Cover again with plastic wrap and refrigerate overnight
Preheat oven to 180°C (medium)
Grease a 25 cm diameter opening mold with butter and line it with aluminum foil also greased
Prepare the cake: in a mixer, beat egg whites until fluffy
Add yolks one by one, beating continuously until light and airy
Without stopping the machine, add sugar, flour mixed with baking powder, and warm milk gradually, beating until the mixture becomes smooth
Transfer to the prepared mold and bake at 150°C (low) for about 50 minutes, or until a toothpick inserted into the cake comes out clean
Remove, let it cool slightly (about 5 minutes), and unmold onto a plate
Place gelato in a bag with a large smooth nozzle
Insert the nozzle into the top of the warm cake and press the bag in various places for the gelato to penetrate the cake
Cover it with excess gelato using a spatula, and garnish with orange segments
Serve immediately
