Add the wheat flour and mix well, without letting it brown
Add the milk, mixing constantly
Season with salt to taste
When the mixture has a creamy consistency, remove from heat and add the codfish, Parmesan cheese, raisins, and egg yolks
Beat the whites until snowy, then add them to the previous mixture
carefully
Pour into a greased mold
Bake in a moderate oven for 20-30 minutes
To serve, unmold over lettuce leaves and surround with boiled potatoes passed in butter
