1 bunch of fresh spinach

1 small onion finely chopped
1 clove of garlic minced
4 eggs
1/2 cup of milk
1 tablespoon of all-purpose flour
2 tablespoons of grated cheese
1 tablespoon of butter
1 teaspoon of active dry yeast
Salt to taste

Steam the spinach leaves
Chop well and reserve
Heat the olive oil and sauté the onion and garlic until golden brown
Add the spinach and mix
Remove from heat and combine the beaten eggs with milk, flour, cheese, butter, and yeast, stirring gently until smooth
Season with salt and reserve
Beat the egg whites until frothy and add the yeast
Mix delicately and fold into the spinach mixture
Mix with low-to-high strokes and pour into a greased and floured mold
Bake in a medium preheated oven until firm
Serve with beef or chicken stew
