To make the dough, use

Add the flour and yeast, beating just until combined
Mix in the candied orange peel, raisins, crystallized fruits, Port wine, and nutmeg
Gently fold in the beaten egg whites
Pour the batter into a greased 9-inch round cake pan
Bake at 350°F for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean
Let the cake cool slightly before removing it from the pan
To make the glaze, beat the egg whites and sugar together until stiff peaks form
Frost the cooled cake with the glaze, then decorate as desired
Dust the top of the cake with powdered sugar.
