Saute the spinach in its own juice and make a paste with the yogurt
Season to taste with nutmeg, white pepper, salt, and spread over the bread
Make a nest with the bean wrap on top of the bread and place, at the center of the nest, 2 slices of kani cut into fine strips
Garnish with parsley and 1 whole kani.
