1 whole 2kg chicken, 5 liters of water, 4 stalks of celery, 1 large onion, 2 medium carrots, 3 tomatoes cut into pieces, Salt to taste

In a large pot, place the chicken, water and salt
Bring to a boil at high heat
Remove any foam that forms on the surface of the water
Add celery, onion, carrots and tomato, cover and simmer for 1 hour and 15 minutes or until the chicken is tender
Remove the pot from heat and strain the broth through a fine-mesh sieve
Use the chicken shredded in croquettes, salads with potatoes, and as fillings for pies
Note: Can be stored in the freezer for up to three months.
