In a pot, place the beef cut into pieces and butter or oil
Let the beef brown
Add the knuckle bones in pieces
Add water
With high heat, let it come to a boil for 5 minutes, removing the foam from the surface
Reduce heat and cook in a covered pan for an hour, always removing the foam
Add the carrots, onions, parsley, scallions, bay leaf, thyme or oregano, and salt
Let it simmer on low heat for another two hours
Strain through a cloth and let it cool
Remove the fat from the surface
Serve with 2 liters.
