In a large pot, combine the vegetables and cover them with water
Add the onion, garlic, and salt
Cover and simmer over low heat for 2 hours
Strain the stew into a deep bowl using a fine-mesh sieve lined with cheesecloth, then discard the solids
Let it cool before refrigerating or freezing
Store in the refrigerator for up to 3 days or in the freezer for up to 6 months.
