In a medium skillet, sauté the tuna and onions in olive oil over medium heat until the fish flakes easily with a fork
Allow to cool and process in a food processor
In a medium bowl, mix together the processed tuna and mayonnaise until forming a creamy mixture
Add the salt, parsley, and scallions
Cover and refrigerate for at least 2 hours
Filling pastry sheets
Decorating with salsify slices, parsley, and scallions
Serving chilled
