1 package of laminated puff pastry
For brushing
1 lightly beaten egg with a fork
For assembly
8 green spinach leaves, 0.5 cm thick
1 tablespoon unsalted butter
1 tablespoon dark brown sugar
2 tablespoons crumbled gorgonzola cheese
For decorating
chopped scallions to taste

Step 1
Using a cookie cutter with an 8 cm diameter, cut out puff pastry slices
Fork-prick them
Brush the egg mixture over the top and arrange them in a overturned baking dish
Bake in a preheated oven at high heat until golden brown
After cutting out the spinach leaves, remove the stems with a cookie cutter
Step 2
In a frying pan, melt the butter (be careful not to burn it)
Add the sugar and cook the spinach until slightly caramelized
To serve, place a spinach leaf on top of each baked puff pastry slice
Place gorgonzola cheese on top and decorate with chopped scallions.
