1 kg of beef
3 cloves of garlic minced
2 onions sliced
1 sprig of rosemary minced
2 tomatoes diced
1/2 green bell pepper diced
1/2 yellow bell pepper diced
1/2 red bell pepper diced
1 bunch of parsley
2 tablespoons (chopped) of fresh cilantro
1 small avocado
1 tablespoon (chopped) of lemon juice
1 and 1/2 cups (chopped) of olive oil
Salt and black pepper to taste
1 kg of beef

1 and 1/2 cups (chopped) of olive oil
Salt and black pepper to taste
Place the meat, 1 clove of garlic, and half the onion in a pressure cooker
Add the rosemary and salt
Cover with warm water and cook for approximately 45 minutes or until the meat is tender
If necessary, add more water
Drain and let cool
Cut the meat into thin strips and combine with the remaining onion, tomato, bell peppers, parsley, and cilantro
Gently mix and refrigerate covered
Make the dressing: blend the avocado, garlic, lemon juice, and olive oil until smooth
Season with salt and black pepper to taste
Blend just to incorporate
Serve the salad with the avocado dressing on the side.
