2 kg of mignon or contra mignon fillet
250 g of bacon strips
Salt and pepper to taste
1/2 cup of dry white wine
1 can or jar of sliced mushrooms
3 tablespoons of butter or margarine
1 green onion, finely chopped
1 tablespoon of beef extract
1 tablespoon of tomato extract
2 tablespoons of cornstarch
1 cup of hot beef broth or water
1/2 cup of madeira wine

Clean the beef well
Wrap with bacon strips and tie securely
Season with salt and pepper
Place in a baking dish greased with butter or margarine
Put it in a hot oven
Braise for about 20 minutes
After that, reduce the oven temperature slightly and braise until the beef reaches the desired level of doneness
Remove the baking dish from the oven
Pour the wine over the beef
Keep warm in the oven with the door open
Sauté the mushrooms in butter or margarine
Sauté the green onion and shallot in a little oil
Add the beef extract and mix well
Add the tomato extract and mix again
Add the hot broth or water with madeira wine, stirring constantly
Add the cornstarch dissolved in a little water, mixing and cooking until it thickens slightly while continuously stirring
Add the mushrooms and remove the string from the beef
Place the beef in a baking dish
Cover with some of the sauce and serve the rest on the side
Serves 6 to 8 people.
