1/2 pound of ground beef
1/4 cup of finely chopped onion
1 tablespoon of all-purpose flour
1 can of tomato sauce
3/4 cup of water
1/4 cup of chopped green bell pepper
1 teaspoon of oregano
salt and pepper to taste
1 medium-sized eggplant, cut into slices (with or without skin)
1 cup of grated cheddar cheese
1/2 pound of ground beef

Brown the beef and onion in a little hot oil
Remove excess fat
Dust the beef with flour and mix well
Add the tomato sauce, water, bell pepper, oregano, salt, and pepper; mix thoroughly
Mix well again
Season the eggplant slices with salt and pepper; arrange them on top of the beef
Cover and simmer slowly until the eggplant is tender, about 15 minutes
Top with grated cheese
Serve in quarters.
