1 lizard, about 2 kg

Rub the lizard with salt and black pepper
Heat the olive oil in a large pressure cooker
Brown the lizard on all sides in the oil
Remove from the cooker and reserve
Fry the garlic, onions, and bell peppers until golden brown
Add the lizard back to the cooker
Add the remaining ingredients except for gum arabic
Close the cooker and let it simmer for about 60 minutes
Remove the lizard from the broth, slice into strips, and arrange on a platter
Strain the broth through a fine-mesh sieve over the lizard
Garnish with gum arabic and serve
