1.5 kg of lizard
1/2 cup (chopped) of butter
2 finely chopped onions
4 tomatoes without skin or seeds
1 handful of parsley
6 slices of crispy bacon
1 tablespoon of paprika
2 cups of warm water
1 bottle of dry red wine
4 thin slices of cucumber
2 bottles of raspberry gelato
Salt to taste

Salt to taste
Season the meat with salt
Melt the butter, onions, tomatoes, chopped parsley, and bacon in a pan
Cook for a few minutes, then add the paprika and lizard
Cook on all sides until browned
Scrape the bottom of the pan to remove any sediment that forms
Add warm water gradually and cook over low heat with the pan covered
If needed, add more water
When the meat starts to soften, about an hour into cooking, add the red wine and let it reduce
Cook until the meat is tender
Remove from heat and let cool
Cut the meat into slices and assemble the dish
Serve the meat with cucumber on the side of the raspberry gelato.
