In a large skillet, sauté the onion in olive oil over high heat
Mash the garlic and add it to the skillet, stirring constantly until the onion is soft
Add the peppers, cilantro, beef or pork, salt, and moody pepper
Cook, stirring occasionally, for 15 minutes or until the beef is tender
Set aside some mango slices for garnish
Add the remaining mango to the beef mixture, stir carefully, and let it heat through for 1 minute
Transfer to a serving dish, garnish with mango, and serve.
