Curchase small onions (about 2 cm in diameter)
Brew water in a pot, add peeled onions and cook for 3 minutes. Drain. Place the onions in a suitable glass jar - remember it must close hermetically - add cinnamon, bay leaves, and chopped garlic to taste. In a pot, mix one part vinegar with three parts water, salt, and 2 cloves of black pepper. Bring to a boil and then let cool. Pour still warm into the jars, covering the onions. Brush with oil and close the jar tightly. Let it cure for at least ten days in a cool place. After opening, store in the refrigerator. It will keep for about two months.
