In a large bowl, combine the yeast, sugar, and warm milk
Mix well to dissolve the yeast and let it rest for 30 minutes
Add the flour, cassava, eggs, salt, and melted butter
Mix with a wooden spoon
Cover and let it rise in a warm place for 45 minutes
Preheat the oven to 200°C (hot)
Grease a large baking dish with butter
Shape the dough with your hands
Remove rounded portions of the dough and place them in the greased baking dish
If desired, sprinkle the fritters with Parmesan cheese
Put it in the preheated oven and bake for about 35 minutes or until golden brown
