For the sauce

2 boneless, skinless chicken breasts (150g each)

4 leaves of red leaf lettuce
1 tablespoon of chopped fresh parsley
3/4 cup of toasted breadcrumbs (pigeon pea cubes)

Mix the sauce ingredients with a whisk
Refrigerate
Season the chicken with salt and pepper
Grill it in olive oil
Let it cool

Cut the chicken into strips
To assemble, place leaves on one side and chicken on the other, then drizzle with sauce and sprinkle parsley and breadcrumbs.
