In a stand mixer, beat all the ingredients until smooth and creamy
Reserve 1 cup of dough and set aside
Pour the remaining batter into an ungreased 8-inch round cake pan
Bake in a preheated moderate oven (350°F) for 30 minutes or until a toothpick inserted comes out clean
Remove from the oven and let cool slightly
Unmold and let cool completely
Top with reserved dough and serve
