Combine the mangoes and water in a saucepan
Bring to a boil, then reduce heat and simmer for 10 minutes or until the mangoes are tender
Add the sugar, vinegar, cinnamon, cloves, and salt
Simmer without lid for 50 minutes or until the mixture thickens
Strain into a hot, sterilized jar, filling to within 1 cm of the top
Cork and process in a boiling water bath for 10 minutes (after the water has reached a boil)
Yield: 250g
