12 peeled and chopped onions
1 chopped onion
2 medium-sized green peppers, seeded and chopped
1 cup of apple cider vinegar
2 cups of white wine vinegar juice from 1 lime
1 1/2 teaspoons of salt
1 1/2 teaspoons of fresh grated ginger
1 cup of seedless raisins

Combine all the ingredients in a large pot
Cook for 1 hour and 15 minutes, stirring occasionally until the mixture thickens
Place in sterilized glass jars while hot
Close well and let it settle
Make around 5 jars of 250g each.
