In a medium saucepan, combine the sugar and water and bring to a boil over medium heat, stirring constantly until the sugar dissolves
Remove from heat and let it simmer for 20 minutes or until it reaches the soft ball stage (see below)

Add the coconut and cook, stirring occasionally, for 10 minutes or until the mixture pulls away from the sides of the saucepan
Remove from heat and let cool slightly
Remove from heat and place small portions onto a greased surface with vegetable oil
Let it cool and carefully remove the cakes from the pan with a spatula
Serve.
