1 deboned rabbit (with bones)

Step 1
Season the rabbit
Wrap with plastic wrap and pound with a hammer
Fry the pancetta in its own fat
Soak the bread in milk and squeeze it out
Mix the beef, Parmesan cheese, eggs, nutmeg, salt, pepper, and bread

Sear the rabbit's bones in olive oil, onion, and vinegar
Add to the mixture of beef and knead
Place the filling of meat and arrange the asparagus around it
Top with pancetta

Roll up the rabbit like a roulade and tie with kitchen twine
Dredge the rabbit in all-purpose flour
In a baking dish, heat half of the olive oil
Sear the carrot, onion, parsley root, rosemary, thyme, and garlic

Add the rabbit and the remaining olive oil
Fry for four minutes on each side
Add the remaining ingredients
Cover with aluminum foil and bake in a medium oven for 20 minutes
Remove the foil and roast for another hour.
