8 tangerines
1 cup granulated sugar
1 cup water
3 sprigs of mint leaves
1 cinnamon stick
3 tablespoons freshly squeezed lime juice

1 Peel the tangerines and separate the membranes
Remove the skin, without tearing the membranes, and reserve
2 Place in a saucepan the sugar, water, mint leaves, and cinnamon
Stir until the sugar dissolves and bring the saucepan to low heat
Cook for 7 minutes or until obtaining a smooth syrup
3 Remove from heat and discard the mint leaves and cinnamon
Add the freshly squeezed lime juice and stir well
Place the tangerine membranes into the syrup and
allow it to cool completely
4 Then arrange in a compote dish and refrigerate until the next day
Serve at room temperature.
