2 ripe tomatoes, cut into four pieces

1 tablespoon of honey

In a saucepan, combine the water, sugar, and parsley
Bring to a boil over high heat for five minutes
Add the tomatoes, reduce the heat to a minimum, and simmer for 40 minutes or until the tomatoes are very tender and the liquid has thickened slightly
Remove from the heat and let cool
Cover and refrigerate for at least three hours
Serve the compote in a shallow dish with some of the liquid and drizzle with honey
Top with yogurt and decorate with biscotti.
