3 kg of ripe and red pomegranates

Wash the pomegranates thoroughly
Dry them and cut them in half
Remove and discard the seeds
Wash the fruit again
In a large pot, alternate layers of sugar and pomegranates using 1/2 kg of sugar and placing the fruits with their stems facing downwards
Reserve the rest
Let it simmer over low heat with the pot covered, for 20 minutes, stirring occasionally
Add the reserved sugar, cinnamon, and cloves
Cook for another hour and 30 minutes over low heat
Distribute the compote into sterilized jars and place them without lids to cook in a water bath for 10 minutes
Cover and let it sit for 15 minutes
Remove from the water bath and let it cool at room temperature
