8 artichokes

Remove the leaves from the artichokes and separate the hearts (see page next to this)
Place them in a bowl, cover with water and add half lemon juice. Reserve

Bring the water to a boil in a pot
Add vinegar, salt, lemon juice, garlic, thyme, and reserved artichoke hearts
Simmer for 30 minutes

Strain the contents of the pot through a fine-mesh sieve and let it drain for two hours
Transfer to a clean glass jar
Cover with oil, seal, and store in the refrigerator for two or three days before serving.
