6 mangos
1 cup of vinegar

1/2 teaspoon grated ginger
2 cups of raisins

1/3 cup of fresh ginger, chopped

Peel the mangos and cut into cubes
Check the quantity (should be 8 cups)
Combine the vinegar, cinnamon, cloves, and ginger in a saucepan, bring to a boil, then reduce heat
Add the mangos, raisins, sugar, and water
Cook for 45 minutes or until thickened
Add the chopped fresh ginger and cook for a little longer
Pack into sterilized jars and seal immediately
Serve as an accompaniment to meats or poultry
Makes 8 jars of preserves.
