1 lamb chops (about 800g)
500 ml of olive oil
2 chopped onions
6 minced garlic cloves
5 sprigs of rosemary
8 large potatoes, cut into chunks
Salt and black pepper
10 tablespoons of fresh parsley
5 tablespoons of fresh thyme
5 tablespoons of fresh oregano
Optional garnish: 4 whole garlic heads with tops removed, roasted along with the potatoes.

Preheat the oven to 140°C and grease a baking dish with 130 ml of olive oil
Add the chopped onion, minced garlic, and rosemary to the dish
Place the potatoes in the dish, season with salt and black pepper, and bake for about 45 minutes or until they are tender (1)
Heat 270 ml of olive oil to a temperature of around 60°C
Remove from heat, add the fresh herbs, and let it rest for half an hour
Trim the lamb, removing excess fat (2), and cut between the bones to make 8 chops (3)
Season with salt and black pepper
Use the remaining oil to grill the lamb chops in a skillet
If grilling on a barbecue, you won't need the oil (4)
Cook for about 2-3 minutes per side, or until the meat is cooked to your liking (5)
Serve with potatoes and drizzle with herb oil.
