1 pork chop of 2 1/2 kg
2 tablespoons of salt
2 tablespoons of dried thyme
1/2 tablespoon of dried oregano
1/2 tablespoon of dried rosemary
1/2 tablespoon of dried parsley
1/4 tablespoon of paprika
1/4 tablespoon of ground nutmeg
1 cup of chicken or beef broth
1 cup of chopped onion
1 cup of chopped carrot
6-7 green and red bell peppers
1/2 cup of olive oil
1 cup of chopped onion
1 crushed garlic clove
1 tablespoon of salt
1/8 tablespoon of paprika
For the sauce
1/4 cup of the cooking liquid from the pork chops
1/4 cup of all-purpose flour
hot water
Preheat the oven to a moderate temperature, around 170°F
Make a mixture with all the spices, salt, and paprika
Then, using a sharp knife, make cuts about 1.5 cm deep between the ribs
Now, separate the spice mixture into two parts
One part should be inserted into the cuts; the other part should be rubbed onto the meat
Once this step is complete, place the pork chops in a roasting pan
Add the onion and carrot
And then, pour in the chicken broth
Place the pork chops in the oven for 3 hours, basting them occasionally
Slice the bell peppers into strips about 2 cm wide
Fry the onion and garlic in olive oil over low heat
Add the bell peppers and fry for 10 minutes
Season with salt and paprika
Place the pork chops on a warm platter, garnished with bell peppers, and put them in the oven at a low temperature to prevent them from cooling down
And for the sauce, strain 1/4 cup of the cooking liquid from the roasting pan into a bowl and discard the onion and carrot
Add all-purpose flour and mix well
Pour in 1 cup of hot water, which should be placed on the stove
Stir to combine the water and the particles from the roasting pan
This mixture should be joined with all-purpose flour and both should go into the oven in a saucepan
Stir frequently
The final step is to serve the meat with the sauce.
