Using a very sharp knife, cut each pork cutlet in half lengthwise to the bone, making it look like an open book
Slice the mozzarella cheese and ham into thin strips
Place a slice of mozzarella cheese and a slice of ham in the middle of each pork cutlet, with a little nutmeg, very little salt and pepper
Close the pork cutlet so that the two halves meet perfectly
Gently tap the pork cutlet to loosen it slightly to better join with the cheese and ham
Dip the pork cutlet in the beaten egg and then in the breading flour, making sure each one is well coated
Fry in moderate heat until the pork cutlets are golden brown.
