3 medium ripe tomatoes, cored and quartered without seeds

1/2 teaspoon black pepper
red pepper to taste

Chop the washed and thoroughly dried mint leaves using a food processor blade
Pulse for about 10 seconds
Add remaining ingredients and pulse until tomatoes are well chopped but not pureed
Pulse on and off for 5-6 times
Serve over any type of legumes, cauliflower, broccoli etc
Yield: 1 cup or 15 soup spoons.
