1 cup of quinoa
2 cups of vegetable broth
1 clove of garlic
1/2 onion
1 tomato, diced
1 carrot, peeled and grated
1 cup of green beans, cut into pieces
1 small head of broccoli
1 tablespoon of chopped fresh cilantro
1 teaspoon of dried thyme
Salt to taste

In a large pot, cook the quinoa in vegetable broth [recipe below] for ten minutes
Drain and reserve
In a frying pan, sauté the garlic, onion, tomato, and remaining vegetables
Add the cooked quinoa and season with cilantro, thyme, and salt to taste.
