In a medium saucepan, melt the butter and cook the onion until it's golden brown, stirring occasionally
Add the sweet potatoes and chicken broth
Bring to a boil, then reduce heat and let simmer for 20 minutes or until the sweet potatoes are tender
Remove from heat, let cool slightly, then puree in a blender
Return the mixture to the saucepan and bring back to a simmer
Check seasoning and serve hot, topped with a tablespoon of creamy cheese
